Its been awhile since i posted a recipe, so here is a good one, give it a try. Just like always, if you don't like a certain ingredient, or cannot have it, just swap it for something else, or exclude it completely.
4 cups grated and chopped zucchini
1/2 cup finely grated Cheese of your choice
5T almond meal
3T Grated Parmesan
1/2 tsp garlic powder
1 egg beaten
14.5 oz diced tomatoes (fresh or canned)
1T olive oil
2 cloves minced garlic
1/2 tsp italian seasoning
3 oz your favorite cheese ( optional)
15-20 Basil leaves
8 oz diced grilled chicken
any other desired vegetables
Cook shredded, chopped zucchini intill soft, Combine ingredients for the sauce and simmer on low heat, Squeeze excess water from zucchini and combine with crust ingredients, shape dough into desired shapes and sizes of pizza, bake or grill dough at 450F for 12-15 min or untill firm and turning brown, add toppings and finnish cooping for 3-5 more min.
